Here are 3 recommended brewing methods for Tieguanyin: the simplest method for solo tea drinkers, an option for those who prefer cold tea, and the traditional gongfu tea ceremony that best showcases Tieguanyin's distinctive aroma and optimal flavor profile.
Prepare
Choose an appropriate amount of tea leaves and prepare hot water.
Rinse the tea
Skip drinking the first brew. Instead, pour it out - this cleans the tea leaves and warms up your teapot or cups.
Brew
For the first infusion, steep for just 5-10 seconds. Watch the tea's color to get it right - not too strong or too weak. Add a few more seconds for each later infusions.
Tea-water separation
Pour the tea into a sharing pitcher (Gongdaobei) using a strainer. This stops the tea from brewing too long, which would make it bitter and reduce how many times you can brew.

The Easiest Way
This is the simplest brewing method, perfect for one person, requiring only a glass or mug. Using Tie Guan Yin as an example, add 12-15 pieces of dry tea leaves (these leaves are tightly rolled and will expand significantly in water, so even this small amount produces plenty of flavor). Brew with 95-100°C hot water by first filling the cup halfway, then filling completely after the leaves unfurl. When you've consumed half the tea, refill the cup, keeping the leaves constantly submerged. With this method, you can refill about 3-5 times before the aroma gradually fades.
